I think today is Day 19 of the BE Fit Challenge. I have lost track of the days. I have done pretty well the last couple of days. I have been eating very healthy.
Since I have not had to work because of the snow, I have been cooking eggs for breakfast. I have coffee to drink. During the day I have been eating carrots and grapes for snacks. I have also increased the amount of water that I drink. Drinking the water helps me to feel less hungry, and I feel better when I work out.
For lunch I usually eat a salad or grilled chicken with vegetables, and for dinner I have been cooking meels from the be fit website. I made Italian chicken last night. It was pretty good. I will attach the recipe below.
Friday was the last time I was able to go to Cross Fit. My husbands car is snowed in, and he has been taking my car to work. I haven't been able to drive anywhere. I have been running. I ran 7 miles tonight. I am very proud of myself for running this far. Seven miles is the farthest I have gone.
The snow has started falling again so I am sure when I wake up in the morning I will be snowed in even more. I am going to keep eating healthy and running until I can get back to the Cross Fit gym.

Here is the pulled pork recipe I forgot to post....

Cook in the crock pot on low for 7 hours.
I cooked one lean pork loin. Put one pork loin in the crock pot. Add two cans of diced low salt tomatoes, 3 garlic cloves, Mrs. Dash (low salt), pepper, and sea salt. Pour all of this on top of the pork. Cook on low for 7 hours.
Italian Chicken Recipe
2 tbsp olive oil 2 tbsp lemon juice 1 clove garlic, crushed 1/4 tsp dried oregano 1/8 tsp pepper Mix all in a shallow dish. Add 4 pieces of chicken, turning to coat well. Cover and refrigerate for 8-12 hours, remember to turn it over occasionally.
Bake chicken at 350 degrees.
