Happy Valentines Day!
It has been a few days since I posted anything. I have been at home so much, and nothing very interesting has happened. I have pretty much followed the same routines every day. I am still going strong on the Paleo. I haven't been to Cross Fit this week, but I will be back on Monday. I have been running. Since I have not had to work this week it has made starting my day much easier. I have made eggs for breakfast each morning. This has helped me to put more protein in my diet. I have had healthy snacks like fruit, vegetables, and nuts during the day. I have also been eating a lot of salads. I usually put fish or chicken on the salads and eat it with oil and vinegar for the dressing. It is amazing how much easier it is to stay on track and eat more often when you are at home rather than work. I cook healthy dinners each night with chicken, pork, or fish, and usually serve it with a vegetable. I think I am reaching the point where eating healthy has just become a habit!

Day 19
I think today is Day 19 of the BE Fit Challenge. I have lost track of the days. I have done pretty well the last couple of days. I have been eating very healthy.
Since I have not had to work because of the snow, I have been cooking eggs for breakfast. I have coffee to drink. During the day I have been eating carrots and grapes for snacks. I have also increased the amount of water that I drink. Drinking the water helps me to feel less hungry, and I feel better when I work out.
For lunch I usually eat a salad or grilled chicken with vegetables, and for dinner I have been cooking meels from the be fit website. I made Italian chicken last night. It was pretty good. I will attach the recipe below.
Friday was the last time I was able to go to Cross Fit. My husbands car is snowed in, and he has been taking my car to work. I haven't been able to drive anywhere. I have been running. I ran 7 miles tonight. I am very proud of myself for running this far. Seven miles is the farthest I have gone.
The snow has started falling again so I am sure when I wake up in the morning I will be snowed in even more. I am going to keep eating healthy and running until I can get back to the Cross Fit gym.

Here is the pulled pork recipe I forgot to post....

Cook in the crock pot on low for 7 hours.
I cooked one lean pork loin. Put one pork loin in the crock pot. Add two cans of diced low salt tomatoes, 3 garlic cloves, Mrs. Dash (low salt), pepper, and sea salt. Pour all of this on top of the pork. Cook on low for 7 hours.
Italian Chicken Recipe
2 tbsp olive oil 2 tbsp lemon juice 1 clove garlic, crushed 1/4 tsp dried oregano 1/8 tsp pepper Mix all in a shallow dish. Add 4 pieces of chicken, turning to coat well. Cover and refrigerate for 8-12 hours, remember to turn it over occasionally.
Bake chicken at 350 degrees.

Happy Superbowl
Happy Superbowl Sunday!
Today I am taking the day off. I did not run today. I wanted to go to Cross Fit this morning, but my car is stuck in the snow. I have followed Paleo today, but I am going to cheat tonight. I plan to have a couple glasses of wine, and some tasty snacks.

Day 15
Well it has been snowing for two days now. I have been trapped inside my house for the last day and a half. When you are stuck inside with no way out it is really hard to stay focused. The weather makes you want to lay around and be very lazy. I have tried really hard not to be lazy.
Yesterday I went to the 2:00 Cross Fit class. When I came home I cooked dinner. I cook a pork chop recipe that I found on one of the BE Fit links. It was pretty good, my husband liked it. I will attach the recipe below.
This morning I woke up around 8:00 and took my dog outside to run in the snow. When I came inside I ran 5 and 1/2 miles on my treadmill. I am trying to increase my distance. After I ran I cooked breakfast. I made eggs and had some coffee ( yep, I put creamer in it).
I had some grapes for a snack this afternoon and took Riddick out to play. I also shoveled a parking spot for my husband so he would have some where to park when he came home from work. I am counting this as a workout. Shoveling snow can tire you out!
I have made a non Paleo meal for dinner. I made homemade chicken noodle soup. I boiled the chicken and used chicken stalk for the broth. I think the only non Paleo part was the noodles. I tried to fill my bowl with more broth and chicken than noodles. I only had one serving.
Tomorrow is Super Bowl. We were going to go to a friend's house in Fredericksburg, but I don't really see that happening with all of the snow. At least if we stay home there will be less good food temptation.

Day 14
The last few days have gone pretty well on the challenge. I have eaten pretty well. I find myself eating a lot of salad. I pretty much do the same things each day. I start my day out with fruit and coffee, or a protein shake. I eat a salad with tuna or chicken for lunch, and oil and vinegar dressing. I bring grapes and carrots to work for snacks, but I usually don't eat them. I just forget. I know I need to work on this because I am usually starving at the end of the work day. I also need to drink more water!
We have been eating left over the last few nights. I had a lot of extra so I didn't want to cook more food until I emptied the fridge out some. I made the crock pot shredded pork a couple of nights ago. It was pretty good. I followed the instructions from the recipe posted on the cross fit woodbridge website. I think next time that I make it I will add some sea salt and some other spices.
I ran five mile outside on Wednesday instead of on the treadmill. Running outside is much harder. I am going to try to run outside instead of on the treadmill as much as I can. I think running outside is a better workout since there are so many mountains (hills) around here. The hills might as well be mountains to this Florida girl. I am just so use to running on flat land. I am going to the 2:00 crossfit class today.

Day 11
Today was just another day on the Paleo. I feel like I am getting the hang of it, and there is not so much thinking involved in what I eat.
I started the day off with a banana and some coffee. I didn't really get hungry until about 1:00. I think I was just so busy at work that I didn't have time to think about eating. I don't really think that is a bad thing, but I know I am supposed to eat throughout the day. When I am really busy I usually don't think about eating, and so I don't eat enough.
I left work around 4:30 and came home. I had some grapes for a snack. I didn't want to eat anything too heavy because I was planning on going to the 6:00 cross fit class. I forgot it was Tuesday, and there is no 6:00 class. I am not going to run today, but I am going to go to the 7:00 cross fit class, and then come home for dinner. I don't really like to go to the 7:00 class because then I end up eating dinner too late. For dinner I am making pork with tomatoes. I will also have broccoli. My poor husband is forced to eat my super healthy dinner too. I think this is why he told me I don't have to cook tonight, and he can just pick something up.
So far this BE Fit challenge is going pretty well. I have not been on the scale since the first day, but I think I am looking a little thinner. I don't want to check yet. I am pretty motivated now.

Day 10
Today was another busy day. Things at work don't look like they are going to slow down any time soon. Although I was busy, I managed to stay focused.
I ate healthy all day. For breakfast I had a protein shake with strawberries and a banana mixed in. I started to feel a little hungry around 10:00, so I had some carrots. I bought carrots that are cut into circles. They remind me of chips, but of course they are not.
For lunch I had a salad with tuna. I used olive oil and vinegar for the dressing. I can't eat lettuce without something on it. For a snack later in the day, I ate some grapes on my way home from school.
For dinner I cooked Chicken Cacciatori, and served it with broccli. ( I found the recipe on one of the Paleo links) The entire meal was Paleo approved. I will attach the recipe to the bottom of this post.
I have a week full of after school meetings so I will not be able to attend Crossfit on my regular M,W,F schedule. This week I plan to attend Crossfit on Tuesday, Thursday, and Saturday. Today I ran 5 miles on my treadmill again. I'll get back to running outside once it gets a little warmer, and there is not snow everywhere.

Crockpot Chicken Cacciatore
---------------------------
1 lg. onion, thinly sliced
3 lbs. cut up chicken
2 (6 oz.) cans tomato paste
4 oz. sliced mushrooms
1 tsp. salt
1 to 2 cloves garlic, minced
1 to 2 tsp. oregano
1 bay leaf
1/2 cupwater
Place onions in bottom of crock pot. Add chicken pieces. Stir together
remaining ingredients. Pour over chicken. Cook on low 7 to 9 hours;
high 3 to 4 hours.

I'm Starting a Blog
I have been reading some of blogs posted on the website, and they have motivated me to start one too. I think that writing this blog will help me to stay more focused and aware of what I am doing to accomplish my goals during the BE Fit challenge.
So far I have done pretty well on the challenge. I think that my biggest challenge so far has been time. I have been so busy at work lately, and I have had a really hard time making it to Cross Fit classes. I have been running. I am going to run the St. Patricks day half marathon in March, and I need to be able to run the distance. I am working on getting in longer runs. Today I sat down and decided what meals I will take for lunches next week, and what meals I will cook for dinner. I think that by doing this I will save time during the week, and I will cook meals that I know are Paleo approved.
I woke up this morning to snow. Since it was so cold outside I had to run on my treadmill. I am a big baby with the cold weather. I ran five miles today.
As far a what I ate today.... I really didn't eat alot. I know you are supposed to eat when you are hungry, but I wasn't that hungry today. I definitely don't think I ate enough. I have to work on this too.
I had a cup of coffee around 10:00 (I put creamer in it. I just can't drink black coffee)
At 1:00 I had tuna fish with cucumbers.
I braved the snow and went to the mall after lunch. I was distracted at the mall so I never really felt hungry. I didn't eat again until dinner.
For dinner I cooked lean steak. I seasoned it with a dash of salt, garlic, pepper, and olive oil. I made brown rice for my husband, and I also attempted to make the mashed cauliflower. The cauliflower tasted good, but it didn't turn out like the picture. I am not sure what I did wrong.
I love chocolate, but I really have not had a hard time going without it.
Tomorrow will be another day. I think we are starting day 9. My goal for tomorrow is to eat a little more, and drink more water.
